Living Well Power Bowls

Serves: 1 (easy to scale)

Ingredients

1 cup chopped power greens (spinach, kale, chard, or mixed greens) ¼ cup canned bean mix (kidney beans, pinto beans, black beans), rinsed and drained ¼ cup organic corn ¼ cup cherry tomatoes, chopped ¼ cup cucumber, chopped ¼ cup bell pepper, chopped ½ cup cooked white rice or quinoa ½ cup chicken, cooked and sliced

Chicken Seasoning

Sea salt, to taste Black pepper, to taste ½ teaspoon turmeric ½ teaspoon paprika 1 clove garlic, minced or ½ teaspoon garlic powder ½ cup water or bone broth (for Instant Pot)

Sauce

1–2 tablespoons aioli of choice (Prime Kitchen Garlic Aioli is a great clean-ingredient option)

Instructions

Cook the Chicken (Instant Pot) Season chicken with salt, pepper, turmeric, paprika, and garlic. Place in the Instant Pot with water or bone broth. Cook on High Pressure for 8 minutes. Let naturally release for 5 minutes, then quick release remaining pressure. Slice or shred. Build the Bowl Add chopped power greens to a bowl and top with warm rice or quinoa. Layer the Toppings Arrange beans, corn, cherry tomatoes, cucumber, and bell pepper evenly over the bowl. Finish Top with Instant Pot chicken and drizzle with 1–2 tablespoons of aioli. Serve & Enjoy Toss gently if desired and enjoy fresh.
