Ingredients
1 cup Kodiak Cakes Power Cakes Pancake Mix 1–2 eggs ½–1 cup organic sprouted oats (adjust based on baking dish size — eyeball it!) Clean-ingredient almond milk or water (just enough to combine into a thick batter) Pinch of sea salt 2 tablespoons vanilla extract 2–3 tablespoons organic ground flax seeds 3 tablespoons organic chia seeds Cinnamon (measure from the heart 💛) Frozen organic berry mix or berries of choice
Instructions
Mix In the baking dish you plan to use, combine: Kodiak mix, eggs, sprouted oats, almond milk (or water), sea salt, vanilla, flax seeds, and chia seeds. Stir until fully combined. The mixture should be thick but scoopable — add a splash more liquid if needed. Add cinnamon & berries Generously sprinkle cinnamon over the top. Add frozen berries and give everything one more gentle stir to distribute evenly. Refrigerate overnight Cover and place in the refrigerator overnight to allow the oats, chia, and flax to absorb moisture. Bake In the morning, remove from the fridge. Bake at 350°F for 18–20 minutes, or until set in the center and lightly golden on top. Enjoy Let cool slightly, then serve warm. Delicious as-is or topped with Greek yogurt, nut butter, or a drizzle of maple syrup.
