Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a large bowl, cream together the butter, peanut butter, date sugar, and honey until light and fluffy. Beat in the egg and vanilla. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Add dry ingredients to the wet mixture and stir until fully combined. Scoop dough into 1-inch balls. If the dough is sticky, chill for 15–20 minutes. Place on baking sheet, leaving space between each cookie. Lightly flatten the tops with your fingers. Bake for 8–10 minutes, until edges are just set. Immediately press a chocolate kiss (or clean-ingredient chocolate drop) into the center of each warm cookie. Cool completely to allow the chocolate to set.
Tips
Date sugar doesn’t melt the same way as white sugar, so these cookies will be slightly softer and more tender. For a fully “clean” version, choose chocolate drops made with whole-food ingredients.
